Many health organizations and nutritionists are now recommending that we eat 6-9 servings of vegetables per day.
This might seem like an awful lot of veggies but a "serving" as defined in the nutrition world is actually not that big. Here are a few examples of one serving of some vegetables:
1/2 of a large bell pepper
5-8 florets of broccoli or cauliflower
6 baby carrots
1 whole medium carrot
1 cup raw leafy greens (lettuce, spinach, kale)
1/2 cup cooked leafy greens (spinach, kale)
Nutrient Dense Salads
Eating a large green salad that includes a variety of colorful vegetables is an easy way to get the daily recommended number of veggie servings. Adding in tofu, hard-boiled egg, beans, legumes, nuts and seeds can turn a green salad into a complete meal.
