This useful chart nicely summarizes the approximate number of grams of different types of fats in common cooking oils (such as coconut, olive, corn, soybean, sunflower, vegetable and peanut oil) and fats (such as tallow, butter and lard).

It also includes the smoke point for each type of oil/fat, which helps us to determine which oils and fats are appropriate in different cooking methods.  A stability index, showing which oils and fats are the most and the least stable during cooking is also included and can serve as an excellent at-a-glance guideline.
